Chef Eric Greenspan Reimagines the Jewish Deli with Modern L.A. Flair
Renowned Los Angeles restaurateur Eric Greenspan has launched his latest venture, Mish, a modern interpretation of the traditional Jewish deli located in Mid City. After a career defined by high-end culinary training and diverse restaurant concepts, Greenspan is finally turning his focus toward his own heritage. He aims to revitalize the classic deli experience, which he argues has remained stagnant for decades, by tailoring the menu and atmosphere to the preferences of younger, contemporary diners.
Greenspan’s vision for Mish is to bridge the gap between legacy deli culture and the modern, ingredient-focused dining trends seen in popular L.A. establishments like Gjusta. While the menu retains essential Ashkenazi staples—such as matzah ball soup and schmaltz-griddled Reubens—it also incorporates a wider scope of the Jewish diaspora. By integrating Mizrahi and Sephardic influences, including amba-spiced chicken salad and cardamom-rubbed pastrami, the restaurant positions itself as a "culinary multi-state solution" that reflects the evolving, diverse perception of Jewish cuisine.
Beyond the food, the project emphasizes a lifestyle-oriented approach to the deli experience. In partnership with veteran operator Bill Chait, Greenspan has introduced a sophisticated cocktail program and plans for late-night programming, dubbed "Bar Mitzvah," which will feature vinyl music. This strategy signals a shift in the industry, moving away from the traditional, daytime-only deli model toward a more integrated, social nightlife environment. By blending historical reverence with modern culinary innovation, Mish represents a significant attempt to keep the Jewish deli relevant for a new generation of food enthusiasts.
